Honey Mustard Garlic Chicken
Hi everyone! I’m back in Savannah and excited to start cooking again! So sorry about the hiatus. Things should be back to normal now.
I haven’t had a chance to cook or bake since I’ve been back, but Pranas made me dinner last night from one of my cookbooks: The Healthy College Cookbook. It has some really great, easy recipes for beginning cooks, and also for anyone in a time crunch. Pranas chose to make honey mustard garlic chicken, and it was delicious! It’s also super simple and fast.

Honey Mustard Garlic Chicken
Prep Time: Approx. 30 minutes
2 boneless, skinless chicken breasts (change amounts as needed)
1/4 cup dijon mustard
1/8 cup honey
1 clove garlic, sliced into slivers
Preheat your oven to 350 degrees F. Place the chicken breasts in a glass baking dish. Cut four small slits in each piece of chicken. Insert a sliver of garlic into each slit.

Mix the mustard and honey in a separate dish and cover the chicken breasts with it.

Place in the oven for 25 minutes. Baste the chicken with the sauce from the pan 1 to 2 times during baking. After 25 minutes, set your oven to broil and broil it for 5 minutes until the tops are crispy, but not burnt, and the garlic is nice and brown. Enjoy!

Yum! The chicken came out really tender and delicious, and the garlic wasn’t too overpowering. This is a really great recipe if you’re an inexperienced cook—or even if you’re an expert cook who wants to take it easy for a night—so give it a try!
