Honey Mustard Curry Chicken Sandwich

I stopped buying readymade foods so I would be forced to cook more often. Tonight I couldn’t really find any recipes I found appetizing, so I headed into the kitchen with only the knowledge that I had lots of bread to use and some good chicken in the freezer. I came up with this simple sandwich, which was actually really amazing. It’s tangy, spicy, sweet, savory, hearty, and hot. You can obviously have this as a whole chicken breast without the bread or put it on a salad or whatever else you want to do with it—I just had a lot of fresh, delicious bread that I wanted to use!

First, get out your chicken breast. Mine was frozen—I defrosted it in the microwave. Cut into relatively thin slices. Cut up as much as you want on your sandwich. Mine was about a 1/2 cup, I think—it was most of a decent-sized chicken breast. Gross but necessary picture:

Heat up your countertop grill, greased skillet, or other cooking mechanism. Season the chicken with salt and pepper and start them a-cookin’.

While the chicken is cooking, mix together the sauce. These are all inexact quantities—just do it to your tastes. There’s no harm in a little taste test while cooking…in fact, that’s the best way to make sure you’re not screwing up! In a bowl or some other small vessel, mix together about 2 tablespoons of honey, 3 tablespoons of dijon mustard, and 1 teaspoon of curry powder. Put in more honey if you have a sweet tooth, put in more mustard if you like things spicy and tangy, and put in more curry if you like curry! Again, just tailor the sauce to your taste. Let that sit so it softens a little bit.

When the chicken’s nicely browned and cooked through, throw it in the sauce and toss it all up until the chicken has a nice, even coat. You’ll probably have extra sauce at the bottom—that’s good, you’ll use it later. Prepare your bread. I used a nice thick slab of ciabatta bread, cut in half. Use a hearty bread, something that won’t soak up all the sauce and get soggy. Something that will fit all the chicken!

Toast your bread. I just stuck mine on my countertop grill and let it get browned and warm. I spread a bit of mayo on my bread because it’s just a habit of mine to put mayo on pretty much all non-PB&J sandwiches. I would’ve put some lettuce on if I had any—top with whatever you like and have on hand. Top with the chicken and drizzle extra sauce over it, then assemble your sandwich and dig in.

This is a messy sandwich, but so worth it! It really was surprisingly delicious and filling. A tasty and easy dinner.
