Grilled Cheese

This is a view of our backyard today. It’s cold and rainy here—I love this weather. It’s perfect soup weather. So, today for lunch, I made grilled cheese and tomato soup. Grilled cheese is pretty self-explanatory, so why make a post about it? Because chances are, you’re used to individually-packaged slices of American cheese on thin, overprocessed grocery store bread with ketchupy tomato soup. Well, it’s time for grown-up grilled cheese. Just a few small changes to your grilled cheese routine and your next sandwich is guaranteed to be the best of your life.

Grilled Cheese
Prep Time: Approx. 10 minutes

Supplies:

Good, hearty bread of your choice (I make my own bread—I highly recommend it! Recipe and how-to coming in a future post)
Two cheeses of your choice (I use cheddar and Swiss, an awesome combination)
Margarine
Panini press
or countertop grill if you have one, otherwise a greased skillet will do
A can of Campbell’s tomato soup
Milk
of your choice

Assemble your supplies. Spread both sides of each piece of bread with a thin layer of margarine. Put one slice of each type of chese in each sandwich. Assemble sandwiches. Put them in your hot panini press, countertop grill, or in your skillet.

If you’re not using a panini press or similar contraption that cooks both sides at once, remember to watch your sandwiches carefully and flip them so that each side is cooked perfectly. Cook until they look something like this.

Perfectly browned and crispy on the outside with delicious melted cheese. Amazing dunked in your tomato soup or eaten plain.

Speaking of soup, the can will suggest that for creamier soup, make it with a can of milk instead of water. I won’t have my soup any other way. It makes it so much better. So, try it. Prepare your soup and serve with a sprinkle of shredded cheddar on top.

So simple, yet so delicious. I am a member of the “grilled cheese is just bread and cheese” school, but you can definitely experiment with adding things like tomatoes, bacon, ham, basil, etc. to your grilled cheese to find your perfect sandwich.
